Both of these are Brother machines with an automatic needle threader, a drop-in top-loading bobbin and a one-step buttonhole. Both will sew a straight seam perfectly. The comparison is not about quality - it is about headroom.
What the extra money buys

How to decide, honestly

Is the Brother CS7000X worth the extra money over the XM2701?
If you are confident you will keep sewing, yes - the speed slider, wide table and ten included feet are real upgrades, and you will not need a second machine. If you are still finding out whether sewing suits you, the XM2701 is the smarter purchase.
Do the CS7000X and XM2701 share the same features?
The core ones, yes: both have an automatic needle threader, a drop-in top-loading bobbin and a one-step buttonhole. The CS7000X adds a speed-limiting slider, a wide table, more stitches and four more presser feet.
Can the Brother XM2701 quilt?
Only small pieces. There is no wide table for the XM2701, so the fabric has nowhere to rest and anything larger than a cushion cover becomes a wrestling match. The CS7000X includes one.
